You make it sound very nice but in practice there's nothing to those DMC3 enemies past that initial puzzle solving barrier.
So you have to hit Dullahans in the back? Wow. What are you going to do with that knowledge. Nothing because there's no other way to interact with them and no other enemy works like that.
Compare that to the parry system in DMC5 which is used by a huge part of the roster in different ways, and actually entails the player doing something engaging.
Or you could compare it to the exact same idea of attacking enemies' back which is also in DMC5 (Hellbat, Scudo Angelo, Nobody, Behemoth, etc.). Vergil's side dash even moves him around enemies, much like Shadow's stinger variant moves it through them.

I'm not even going to mention all the other armored or teleporting enemies, or all the ranged enemies.

Actually the best way to dispatch Nobodies is to hit the weakpoint on their back to get rid of their masks, then parry them when they bring out the new mask. Once they run out of masks they're completely unable to do anything.
It's actually one of the enemies in the game that best reward paying attention to it.
