The most fun I have with Nu-Zelda is wearing the OoT/Fierce Deity/Twilight Princess outfits and wandering the map while I listen to Zelda essays and lore videos. I don't even have any set goals in mind half the time -- I just pick a spot on the map far away from me and make a night out of walking there while I vibe out. It's nice when I want to go sightseeing and take a break from the older Zelda games, but the N64 and GCN titles always bring me back for their dungeons and visuals.
But you're right, there isn't a whole lot in those games that surprises me outside of the main story set pieces.
