Ruby learns that Sapphire actually does like baths, the water just has to be boiling. This is useful for later when he must wash her himself.

But I'm not sure why Sapphire's pokedex recorded her jumping 521 times, either it's some automatic sensor/counter or there's a diary note taking function, where Sapphire just autistically counted how many times she's jumped for the past 3 months because she thought it was important. Either way she's an enjoyer of jumping and has a lot of energy.
