If you want something easy and stowable, the Bora Centipede is a really good option, and comes in a range of sizes from 2'x4' up to 4'x8'. And they have tops with a choice of flat, 20mm dog holes, or 3/4".

And once you have a beefier bench built it's still useful for when you need a workbench somewhere else. I've got one I set up on my apartment patio to do stuff on.
