The reason for this discrepency is because the Old Testmant god is actually a man. He walks around and talks to people. he's just another pagan god. In fact nowhere does it say he's the "only" god, just that he's the one true god of the jews.
Whereas the new testament incorporated a lot of Greek Neoplatonist ideas. So in this version god is an etherial spirit living in the metaphysical realm, which cannot be seen or touched.
Remember the new testament was all written in greek, so platonist ideas creeped into the writing
