As a spectator?
Broadly speaking, I'd say IndyCar or F1. In F1 the races are short, there is only 1 type of car and F1 does an absolutely amazing job simplifying things so its easy to follow: 2 car team with matching liveries that are more or less consistent race to race, color coordinate graphics (that actually work) and a hype team that could make a block of ice melting sound exciting. Plus, there is an overwhelming amount of supporting content between races.
Me mum saw the 2024 Indy 500 and now she even watches practice session and Off Track. She doesn't give a fuck about any other series, but she loves IndyCar. It's actually pretty cute to get a text asking me about random race details. IndyCar isn't quite as neat and polished as F1, but what it lacks in production value, it makes up for in on track action. IndyCar is also easier to follow on ovals than NASCAR, for some reason I can't quite explain and getting over the idea of

might be an issue.
All that said, you might be able to create an interest via some personal connection. Say if they have a BMW or Mustang or something, maybe they could be introduced to a racing series that features a car they identify with.
As a last point, while there are a ton of great racing series in the past, I think introducing someone to something that is happening today is probably the best idea because
