Djokovic is still good enough on grass to comfortably handle the vast majority of the tour but I don't think he will be able to hang in the longer rallies with Sinner. He was already struggling in rallies with De Minaur but won because De Minaur's serve was too exploitable. If Sinner serves like he did against Shelton it will be a different story. Still a little iffy about the elbow because I do think it could be a bigger problem against someone with a much more dangerous return game which Shelton obviously doesn't have in comparison to Djokovic. But @1.5 are some great odds for Sinner to win. No doubt they would be a bit lower if not for the Dimitrov match.

The example you're giving with getting 152 out of a potential 160 winnings isn't really true. Even with huge leads and little time left you're often getting scammed out of double digit sums. The match basically has to be over with 40 to love on the last service game up a break for the cashout to be minimally different to the actual sum you would get. The second problem I'd have a hard time making it a reasonable habit. I'd probably consider cashing out in every other match where a player I picked has a lead. I'm really good at psyching myself out thinking every player ever can still choke this regardless of how dominant the match and the score has been. So I'd start leaving money on the table in all sorts of matches and that adds up quickly with a larger volume of bets.
Finally in tennis there are all sorts of players that make it hard to predict if a retirement is really going to happen. They play through injury for whatever reason like prize money or just dumb "pride" or they take like 3 medical timeouts and are still totally fine and potentially even win the match. Then there are the kind of players who seem completely physically fine and decide to retire out of nowhere. I've seen all of that shit happen before. Someone like Parrizas-Diaz was probably going to retire given she was already struggling physically and took a medical timeout in the second set. But what about someone like Korda who genuinely had an arm injury and still played out 3 whole sets at the AO against Machac? What about players like Yastremska or Starodubtseva who take several medical timeouts but still play on anyway? So many factors to consider that I'd rather not try to constantly predict if a retirement really is going to happen.
