DNA doesn't determine your height, it determines your potential. Takakeisho ended up shorter than his father because it was only later in life that he learned that you gotta eat big to get big.
People talk a lot about phenotype when discussing genetics, but the term "chemovar" rarely pops up. Chemovar refers to the specific expression of a DNA given specific outside inputs. Take two seeds from the same tree and grow one in perfect conditions (the Onosato tree) and you'll get a better result than the one that didn't get watered enough and was in partial shade (the Takakeisho tree).
Here is a pic of identical twins to illustrate the point, the both have the same genes, but its not hard to tell which one put more effort into leading a healthy life.

The highlight for me was seeing Meisei's chagrin at having snatched defeat from the jaws of victory followed by the slow-mo closeup replay of his display of frustration, but seeing stuff like the training footage was pretty good too. Really make you wonder if somewhere back down the line Meisei did something to get on the wrong side of NHK's documentarians.

The fight only gets more impressive the more you watch it. Hoshoryu actually looked kinda panicked once he realised that there's nothing he could do to get Dan off him. I think the reason he's so immune to being pushed down because he's actually so close to his opponent that they simply don't have the leverage to push down on him with any real force. You either keep him out the way Onosato and Daieisho have done it, or you're basically done for because he IS going to take out one of your legs eventually.
