Basically they skim 20% (or whatever) off the total amount bet and redistribute the remaining pot to the winners on a pro rata basis. The odds (sometimes the payouts depending on the system) will be changed as more money goes on different runners, and the only real bookie skill is establishing the opening odds but even then they’d have to be way off for them to actually lose a lot, which is why really the only way to beat the bookie is run early roughies with long odds get plunged on but they just have to adjust for that. Bookies actually usually make slightly more money when favourites win, if they’ve offered good odds on less favourable runners the punters bet and lose more on those. Basically if there’s a game on say Canberra vs Brisbane next week and I want to take bets I’ll start at $1.90 on each team so if you bet $1 on Canberra and your mate bets $1 on Brisbane I take $2 and payout $1.90 to whomever wins, so I make 10c for facilitating the bet

As more of you place bets I’ll adjust the odds accordingly, it’s all mathematical. That’s if it’s a 50/50 looking game, if it’s something else like Canberra at home to the Titans on a Friday night in July I’ll offer $3-4 or more on the Titans and shorten Canberra to $1.10-1.30 or thereabouts and try to lure punters into taking a chance on the Gold Coast. If so much money comes in on GC I’ll then bring that price in and lengthen Canberra to make it more attractive. This is basically all it is and you extrapolate that out if there’s more runners etc

Yeah there is, bookies will also manually adjust the odds as information comes in like say some star player is suddenly out the day before the game they’ll bring the opposition price in before taking more bets and then ease the injured star player team out, information is king
