As other anons have said, it depends on the rikishi. Sumo wrestlers are actually the *good* kind of fat (yes, I know) during their career because it's mostly subcutaneous fat and they eat a generally healthy diet of lean meat, a lot of vegetables, and starches (chunko nabe, which is a perfect winter stew by the way), while also exercising a lot. The days of the extremely ripped rikishi (Chiyonofuji for example) are probably long gone, but even today, under that top layer of fat, rikishi are probably more fit than anyone in this thread.

The problem with retirement comes with the loss of activity. Lots of sumo continue eating the way they used to but are no longer working out, so they then start developing visceral fat, which is the bad kind.
