Rather than premodern I’d like to see a "magic as it should have been" format, with only those sets legal that were in Standard at some time, and all planeswalkers or maybe just all mythics banned.

There have been several attempts. Unless you are content with only having a handful of players, it doesn't seem worth the effort. As a serious mtg player, I would suggest removing mechanically-unique UB and all non-Standard sets to clear away most of the garbage for the ideal mtg card pool.
Since I've given up on being a grognard, the following formats have covered pretty much all the bases for me.

Haven't played Premodern or Old School in paper yet, but have one irl friend interested in at least Premodern. Worth noting I don't own any authentic cards and proxy everything in paper. So many examples of bad design in nuMagic, but one that I particularly hate is the apparent psychotic commitment to making sure that no two cards ever produce the same token, even when they literally produce the exact same fucking token.

Kaldheim is the worst example of this, with some cards producing 4/4 Angels with flying and vigilance while others produce 4/4 Angel Warriors with flying and vigilance. Legendary shitpile, that.

1/1 Monk with prowess. 1/1 Otter with prowess.
Pilot that can crew vs Pilot that can crew AND mount.

It's getting to a point where extra decks of random ass tokens are getting larger than the damn decks themselves. This shit is such sloppy, lazy, thoughtless design that does nothing but make the game worse.

Hey, I'll admit that I wasn't exactly hyped to test the card prior to release. It wasn't even on my radar.

I tend to wait to actually see things on the board to judge. And, yeah. ONE game seeing a Cutter opposite me, and my first thought instantaneously was "This is not acceptable."

A single game. Not even a full game, literally the first instant I saw someone cast it and thought about how it would play out on the board. Sometimes things don't quite connect unless you see it in a game.
Beyond that, the absolute bloody headache of tracking Monk p/t as the Cutters slip and slide on and off them alongside Prowess triggers is a total nightmare that absolutely any competent playtester should easily be able to identify as a problem.

I really don't know what's worse. Their playtesters being such stupid losers that they couldn't identify how good Cutter is, or them just not even playtesting it at all.

It's very clear they stopped playtesting in paper some time around 2020.
Initiative/Dungeons, Day/Night, Companion, and an extreme overabundance of tokens, minigame cards, and flip cards are all mechanics that do not function well in paper. These are designs that could have only come about from playing an automated version of the game.

I wouldn't say geist is just a fun-of inclusion here, both lists are trying to punish the opponent for relying on spot removal to deal with threats and geist synergizes with that plan, the fact that cori can give it haste and planisphere can grow it to get through blockers is relevant too
maybe there's a more efficient way to build this deck without including geist, but these lists look good to me

Neobrand is simic combo. every card it casts is green or blue.
Amulet Titan (Minstrel) is simic combo, however many players choose to splash red in the sideboard for Firespout. I'm giving it a pass because the maindeck is strictly G(U).
Additionally, there was a Simic Midrange deck that went 9-1 in a Challenge about a week ago.
