Critical Role made goliaths popular. Critical Role is, as far as most modern players of 5e are concerned, the effective face of the franchise either on the same level as Forgotten Realms or ahead of it.

What we are seeing happen here is that the new nerds entering the setting don't give a shit about tolkein or his direct copycats. They are being inspired by new fantasy media thats drifted away from that source material, because they have no reason to hold the original as special.
How are you going to sit down a zoomer and tell them that they HAVE to give a shit about orcs in any way that isn't just "you are obligated to worship at Tolkein's altar"? Even during their prime orcs kind of sucked as a PC race because of how much of a malus they took in stats that weren't relevant to hitting something with a stick, and inertia from half-orcs being playable for longer plus the fact they didn't have the same debilitating base stats meant they were always a second pick.
Now that orcs have the image of repulsive slackers who cowardly cry discrimination whenever someone calls them out for their outlaw behavior (which is actually something kind of IC for a Tolkien-style orc to do if they knew what a discrimination was), they are seen as an uncool "that guy" race in the same vein as Kender while Goliaths are a simple to understand Kratos expy with no particular baggage on how they're supposed to act, with CR reminding everyone that they exist.
