Can I make a RPG system just by combining all the rules I like from various different games I've played or read about or is that a recipe for disaster? My online friends want me to DM but I have no experience and can't decide on what to run lol.

Can you mash stuff together? Yes. Should you if you have no experience? Probably not.

My only ttrpg experience comes from playing a fuckton of gamebooks and board games lol.

I'm reading through the rules for advanced fighting fantasy right now and I like it ok but it might be too rules light for me.

Rules exist in a context, OP. Good design comes from having a given rule in an appropriate context, and not just complete slapdash. That said, smashing a bunch of rules together into a basic kludge isn't the worst way to begin a journey into system design. Just think through it afterwards, playtest it, then refine based on the conclusions you draw from actually playing the damn thing.

only if:
1. You're willing to simplify/drop rules as soon as they don't work
2. You know more than one ruleset and can substitute a rule for other
3. Your players don't mind the instability
I'd start with a simple but complete ruleset that works and, as we play, introduce different rules as time goes. I'm actually planning on doing that with nimble, playing a normal campaign and slowly introducing more stuff for the players, like 4e rituals, eventually ffd6's artifacts and maybe classes. I'll consider it successful if I can get a good feel for the system and make the geomancer and the blue mage work within it, as well as adding easilly accessible ritual magic even non-casters can use.
Maybe one day I can even add some IKRPG stuff.

Only if you're willing to spend way too much time making sure everything works together. You're talking about creating your own system, which is not a trivial task unless you're going for very simple.

Yes, but then you need a seperate rule for every single thing. The aim is simplicity, so its better to have one rule for many things

Why don't you tell us what all your favorite games are and we'll give you general advice on what can be ported to a tabletop experience and what cannot?

This is like asking "can I make a car by combining parts I like from various cars I've driven?" If you're a talented mechanic and driven vehicles with compatible components... Maybe. More likely you'll end up with a pile of scrap that doesn't move.
