Familiars and animal companions who kept going after their masters got killed.
Pathfinder version of mimics want desperately to be human, but they never can.
Sentient magical items capable of getting themselves around, easy for suits of armor but other gear may have more trouble.
Wisps of elemental energy.
Insect swarm with a sapient hivemind.
Intelligent chimeras.
Purpose built constructs or even undead, their forms bent entirely to their intended use.
Flumphs.

Rifts has Pythonans, which are literally telekinetic snakes with a love of psionics and magic, and Vernulians, which are cyborg snakes with tentacles.

Starfinder 1e had around 120 playable races. A fair number of them were not even kinda human. The Alien Archives are still some of the best bestiaries in tabletop to this day because of the insane amount of player options they introduced. If it wasn't a mindless beast or unchangeable AI/construct, it usually was a playable race. It got weird where you just had straight up uplifted bears and space walruses and such on top of frankly bizarre alien concepts.
