A corpse should never be a long term thing as something you should control or use. Having to make a body get up and walk to where you need it to so it doesn't look weird is one thing but if you're going to have undead, forcing a soul to possess an inanimate object seems not only more horrific but vastly more practical.

Counterpoint: Spirit inhabitation typically works best when the vessel has strong sympathetic connections to the embodying spirit. So if we're talking about making servitors by conjuring spirits of the dead, attaching them to their own long-rotted body is certainly practical. Not to mention the superior intimidation factor against weak-stomached enemies.

Counter-Counterpoint: If having a piece of the original individuals body is a necessary component (i'm not against that, the process should never be easy) then incorporating the bones into some kind of body structure makes sense and achieves the same result.

I'm simply of the opinion of just having the body work is boring. That being said, I'm also against the idea of industrial undead revolution as a means of creating some kind of paradise as well.

Sympathetic magic isn't purely scientific, a finger-bone inside the chest compartment isn't going to be as effective a tether as the complete (or mostly complete) corpse.
As to why this doesn't lead to "undead industrial revolution", well that's easy. Necromancy IS inherently evil and monstrous, and if it doesn't attract templars to your location it will rarely be in the hands of someone who is well-tempered and able to convince society that animating corpses is totally fine because they farm more efficiently or whatever.
