Simply raising the cannons into the air would be a nightmare, much less aiming them
Just dump refuse metal from on high and skewer enemy combatants in a way that they may escape, but can't fight back against.

Just put some people with bows on the thing and have them rain death on their foes. Metal is heavy and you don't really want heavy shit on your war balloon

For every action, there is an equal and opposite reaction. You fire a cannon from a balloon and the cannon will shoot out the other side of the balloon or spin the balloon into uncontrollable spirals.

How many archers per balloon? How high up? What does the wind do to the arrows?

Compare all that vs adding more archers on the ground with the money you spent on the balloon.

Does GW make lanterns? No, I didnt think so. If you turn up at a tournament with a realistcally sized balloon made from a real lantern, (not the retarded plastic/resin one GW makes), you would be hounded out by the seething paypig autists for 'modelling for advantage' or 'not using 99.9% GW products', or other such bollocks.

Well not only would a cannon firing generate enough recoil to send balloon flying in the opposite direction, if not outright crash, its also kinda hard to have it go where you want it to go

I'll throw you a bone: The Chinese developed kites large enough to carry a kid. They used them to scout out enemy movements and relay messages.
Some English monk (Eilmer of Malmesbury or something like that) made a hang glider and travelled 80 m with it, landed badly, injured his foot and the abbot outlawed flying.

tl;dr flight *was* historically used in the military where possible and not forbidden

first hot air balloon in recorded history was in France in the 1780s so... well past the medieval period. they also didn't have guns either. so if you are asking why didn't the just use future tech to win why not ask why they didn't build tomohawk missiles and his strike all their enemies castles?
