Is this like a situation where you're playing with someone in the rural boonies using subpar 128kb modem? So you have the luxury of everyone able to come at gameday, but not the luxury of something more bandwidth heavy like a VTT or even a voice chat? Anon do you live in central Australia?
Anyway it shouldn't be too different from classic play by post, but keep in mind on how long your expected session is going to be and how much you're willing to accomplish. From my experience live text/chats of 6 hours would get you roughly the same amount of progress as 4-hour in real-life sessions (so around 66% efficiency). Although this depends on how fast and accurate everyone can type and can be slower or faster, but generally it's going to be a slower pace than what you're used to.
If you're worried about text bulkiness it pays to prep up descriptions beforehand on a notepad for copy pasta (helps to have some stock photos ready too). Once the main scene description's done there's going to be some question time for the GM and a long discussion amongst the players, so you'll have a breather.
If you want something new to try out (pic) was quite simple to do in chat. But IMO you should try a new system in the real first before going into post or text.
