My character always tries to negotiate/intimidate the enemy into surrendering before the fight (Unless it's an ambush). Sadly, she is just a smol, cute redneck elf. She does try to spare anyone not willing to continue fighting.

Depends. How many crimes have the bandits committed, and of what severity? Some bandits historically were just local laymen resorting to desperate (violent) measures to survive. As long as they've not done something genuinely unforgivable (like murder, mass beatings, or stealing food from people who need it) and they seem to genuinely regret turning to banditry and show a desire to never do so again, there's room for mercy. But this is, admittedly, pretty unlikely. Any bandit group that's been at it long enough to become competent at the job would have already racked up enough horrible crimes to have earned summary execution no matter how much they beg for forgiveness.

If they had the option to make a stable, safe living back at home, they probably wouldn't have chosen the risky life of a bandit in the first place. Also I believe thumbs are quite useful for farmers, too.

We'll see next week. The Rogue was straight up going to torch their hovel before even looting the damn thing because she was so pissed over being shot at. The two snipers weren't even really trying to kill them, just get them to fuck off, but the party bee-lined it up the street under fire to get at them; I was baffled they didn't even look for cover first.

I was a little surprised the party even took them alive but I guess having the two snipers actually chatter when the party was sneaking up on them worked. It'll be interesting to see their reaction when they figure out they might have to take care of two prisoners after they come up short for the stuff they're supposed to be scavenging.

Mercy as in letting them go? rarely. While it dependent on the circumstances and I also count Guards of High Ranking enemies into that question the general M.O. is that if they surrender they are likely brought before the Law.
Why? The only reason I am not dead right now is because I was better than them/armed etc. But how many Travellers did they kill that were weaker than them? Did they listen to the crys for mercy of these people? Had I been one of them I would lie dead in the mud and they would not think of me again.

We usually end up giving them a job
In most of my 5e sessions whenever a bandit group tries to rob us on the road we end up killing the leader or some of them and whoever survives passes our test that we were totally putting them through this whole time
It's kind of slavery but we pay and feed them what we can and if they run away while we're sleeping we don't really care
Though when they steal something we usually hunt them down even if it's something minor like a wine skin
One time in late game we had three of our bandit recurits go take care of the other bandits in front of us
The three tried to get them to run away or else he's gonna regret it
They didn't listen and they fought
We took in a new member of our company
The dm described how the newest bandit looked up to the other three in fear and the three looked back with a somber expression, remembering when they used to feel that kind of fear

Kinda. Well, when I was running a Pathfinder 1e game, my players were trying to establish themselves as new nobility in the city. So, they started taking some enemies prisoner, showing them off to the townsfolk, and sometimes reforming them so they became helpful NPCs

The party I'm currently in would probably take bandits alive if they surrendered. We don't really have the facilities to take a lot of prisoners though, so they might end up being shot or released depending on the circumstances.
