Why is it that every nu40k Primaris Ultima Founding Chapter is like off-purple or mint blue or some other tertiary colour and has a name like "The Emperor's Krakens" or "Voidguard"

What happened?

The fans grew up and got jobs at GW, and then their kids did the same.

In all seriousness though, the game you liked hasn't existed for years, and the people who made it have all moved on to other things.
Endless complaining about meaningless change in the era of churn and burn consumerism is tired.

Because that's how they've been named since the earliest days of 40k. Primaris arrived in 2017 and void is a new trend word after that but neither X guard nor Emperor's X nor X of the Emperor are in any way new.

Copyrighting and marketing. If GW names it's products it can copyright them and stop others selling similar products with the same name. Primaris not space marine, Astra militarum not Imperial Guard, Age of Sigmar Urucks not derivative generic old world races, etc.

ALL THE LORE IS AN ADVERT DESIGNED TO SELL THE CURRENT PRODUCTS. It isnt real, it isnt consistant and will continue to change over time as GW treis to push new toys.

by 1990 the Golden Demon subs for space marines were all trying to produce their own Chapters

the Lamenters were in GD in 1990 (one of the diorama winners), everybody wanted to paint their Dark Angels as Deathwing (which is why the lore makes the Deathwing part of a secret society of the officers), and then you've got shit like this guy winning prizes

Because the primary colors are largely taken? Blue is ultramarines (or crimson fists), yellow is fists, black is templars, white is scars, green is salamanders, red is blood angels.

Purple is one of the few colors without a strong association to an existing faction (same for khaki/organge).

You are a newfriend and your leaning towards First Founding chapters, like GW has in recent years, shows it.

Plenty of room for red or green or yellow or whatever chapter without them needing a Codex Supple

The first foundings are the main chapters, they are the ones most people know and the ones with the most iconic color schemes. This has always been the case, there has never been a time when the aurora chapter or whatever were as recognizable as the ultramarines.

You obviously CAN paint your marines blue and gold, but most people dont want to have their OCs mistaken for an existing thing. Its the same reason you wont find too many names like "the star wolves" or "the crimson hands" as chapter names. People (generally, and only to some extent) aspire for originality.

I thought we were talking about color schemes? Frankly all codex supplements are gay and retarded and there should only be a single space marine codex that covers all space marines (even grey knights). Same for chaos marines, they should all be only one book.
