Trying to avoid the most congested places like Acadia national Park, kancamagus highway etc. Want to go deeper into Vermont / New Hampshire /Maine with no crowds but beautiful scenery and foliage.

The best fall foliage occurs when a good wet late summer is followed by the sudden onset of colder weather. If there is a rainfall deficit or the temps remain stubbornly warm, the foliage won't be as brilliant. However, you can rest assured that the goddamn leaf peepers will infest any part of the country with the best fall foliage.

Niagara Falls in November. Assuming first snow hasn't popped is gorgeous on the river. There are trails that go along the cliffs down the river away from people that absolutely on fire with orange and red.

Northern Vermont gets it the best and miraculously gets way less tourism crowds.
Stowe will be a little crowded, but very pretty and there's stuff to do around there:

Anywhere in the circle in picrel will be pretty and within reasonable distance to amenities. Most areas outside of that will be a little too remote probably. The North East Kingdom (top right, outside the circle) is also very pretty like picrel, but there's basically nothing to do there.

Western MA can be really nice in the autumn, and doesn’t get all that many tourists.

Check out Shelburne Falls. Not far from there, on the Mohawk Trail, there’s an absolutely beautiful little hotel called Shelburne Springs—they’ve got like eight or ten suites in what was once an old folks’ home, and a surprisingly cool little bar. It’s small and expensive, though.
