For just the countryside yes. Paris could be 2-3 weeks by itself.

If you do that green route down south, you'll need a car. There's no convenient bus or train route to get between a lot of those spots. Without a car, you'd miss the good stuff like the Pont du Gard.

If you go by car make sure to take the secondary roads, much more scenic and no toll.

If you want to see the countryside, especially if you imagine something like your OP picture (is that Colmar?), I would take a different approach. Start with some places you want to see and then ask ChatGPT to make a roadmap.
