I am taking my father on his dream trip to South Africa.

We will be visiting Cape Town, Kryger National Park and Mauritus.

I would like to avoid us getting murdered.

Any tips on what to do and what to see? I would like to dive (I have the license) and see nature and animals.
My father would like to do a few rounds of golf (Im thinking Mauritius for this)

Out of all places in Africa and you choose fucking South Africa. Not only it is one of the most violent and unsafe countries in an already unsafe continent, but you are bound to be assaulted Mad-Max style when driving. Unironically Zimbabwe is safer than SA

I would say do a guided tour for SA for sure. It's not the safest place.

It used to be one of the safest and whitest countries in Africa

Heavy emphasis on "used to"

Nowadays I'm pretty sure it's even worse for both living and tourism than neighboring Namibia and Botswana, though neither are really first-world countries, and the continent obviously has a pretty low bar in general

Namibia also has some white Afrikaner types I think, though only 1% compared to South Africa's 7%-and-declining

Botswana actually has more, at around 3%, though it's safer, more developed, and has never had apartheid
