Force lightning makes for a neat renewable energy source, actually. Why is this not explored more in SW?

Because Legend of Korra literally did this to lightning bending in Avatar and ruined its own world building. Force lighting is something only powerful force users can preform. Having it used for menial labor trivializes all that.

Sith using force lightning is like a reference to the mad scientist trope, Frankenstein type of thing, "what have I done" Oppenheimer meme, a Tesla vs Edison late propaganda about messing too much with the elements of this world.
The Sith talk about technique and development, they are industrial, they build, they hire, they arm themselves, they are actively trying to mold the universe in some shape or form. The Jedi are monks, farmers, samurai, they think industrialization is evil, they are afraid to interfere, they love the status quo and walk around in robes talking to other soft well behaved celibates all day through grand halls. While the Sith are trying to bring people back from the dead and experimenting with lightning, the Jedi are against it calling it Dark Side. Dark as in unkown, yet to be discovered, the Jedi think we should stay all the time in the light side, in the comfort zone. At the same time they are okay with manipulating a guard's mind, because what's the big deal. Hypocrites, the whole lot. Anakin's sin was fighting for his love and breaking the Jedi code.
