The majority of it just comes down to getting the right ingredients. Nobody is going to taste your slightly off cutting technique, they're going to taste the hyper expensive salmon or whatever.
High end sushi is treated like a technically precise thing when it's really just that they have more exotic ingredients than what you get at a sushi train.
