Its about nature. The guy in the back seat is a killer out doing hits. The guy driving is a pushover who sits in a cab all day instead of doing something different. The coyote is out looking for its meal for the night

i thought that too for some reason but I looked it up and it was scripted. they couldn't train or tame the coyotes to behave in a predictable manner, the shakiness worked for the scene.
