When these people want special shit, we accommodate. But only if we have the shit to do it. If somebody wants asparagus, and we don't have any, they ain't gettin' it. Five Easy Pieces dude isn't a tough substitution to cook. But both the waitress and the customer were being dicks about the whole thing. It's so much more simple to bring customers what they want, if it's reasonable. Waitress gets a tip, customer is happy, everything is good.
