The story is lazy and hackneyed the director is irrelevant not even the greatest director of all time could make them tolerable

The story is decent, most of the worst touches in the prequels are from things a good director would fix, cinematography, choreography, dialogue.

Probably Spielberg, but who knows, perhaps some of the guys that were around at the time, Verbinski, Singer, Cuaron, it would have been interesting i guess lol.
But yeah in the end like it or not i gotta admit Lucas has his style and there's no Star Wars without him, but yeah he would have still been there supervising everything.
