If you imagine a creature that needs to do something moral evil in order to life, you already have you ambiguity.

The Wraith from the show needs to consume human life force. It's not that they deceide to be evil or something. However, the show takes a lot effort in order to show: "They are still evil".

It's just bad storytelling!
If and when you're not okay with writing about such stuff, doesn't bring ideas like this at all.

I don't entirely understand how the demons work in frieren, the way it's described that they use language is it's almost like a mimicry without any actual meaning behind it, I guess kinda like ai.

But they clearly are shown to have motivations and to use language directly towards them.
