In TNG/VOY/DS9, Q's power is kind of limited. He was afraid of Guinan for some reason, so Q isn't *really* immortal, or else he wouldn't be afraid.
It isn't even apparent that Q has any control of time whatsoever (other than nuTrek Picard S2 bullshit that isn't canon.) In the S6E15: Tapestry, Q doesn't *really* alter time to send Picard back. Its really just some dream shit in Picard's head while he's dying. It isn't even apparent that it was really Q in Picard's head. Picard could have just been dreaming the whole fucking thing, even Q.
If anything, Q's only real power is the ability to move shit around and make *seemingly* real people/objects appear out of thin air. We see no powers other than that.

You'll see that Q is not afraid of Guinan, but rather confronts her like Saint George confronting the Dragon, seeing past Guinan's illusions and even a moment before giving her a "departure" (final blow)
