As someone who likes to goof around with generative AI you can still make interesting stuff, the problem is that the communities and userbase are mostly full of retards prompting the equivalent of "big anime bob and vagene!"
There's also a new-er model that's going around called flux which can actually handle making words and does a lot of stuff I have struggled with on stable diffusion, but if you're not going to try to work with it, it defaults to this anime-aromasensei looking style.
However, I've always maintained that the older generations of generative AI created much more interesting stuff because it was still abstract and hallucinating constantly. I find a lot of that stuff a thousand times more interesting to look at than generic anime waifu #5678
