Because Netflix execs are boomers and still believe in the star system. John Cho is the closest to an Asian-American star (he was on American Pie, Harold and Kumar and Star Trek) so he was a safe invesment from their boomer perspective to bring general audience. Also Mackenyu was still unknown in the west. He became famous after One Piece.

Andrew Koji could be another good choice but nobody watched Warrior

Tell that to Neflix producer. Also Jackie Chan was still doing wild stunts when he was middle-aged. It's just that Cho never received proper training. Probably the boomer execs thought that because he's Asian, he must know martial arts. It doesn't help that Netflix productions have very low budget

For some reason he became the get-go guy for live actions but his first hit in America was One Piece. Even the failed Saint Seiya live action benefited from his sudden fame, gaining streaming views around the world just from girls that wanted to be raped by Mackenyu. Still not enough to get a sequel though

Because Netflix wanted a recognizable face for bringing general audience. They're out of touch boomers surrounded by nepobabies. That explain a lot about Netflix
