They had the Prison Break problem and blew their load WAY too early. The most interesting part of it all was how the hell would they make this basic ass, run down sandwich shop in a working class neighborhood successful with the ability and vision of two top tier chefs. Basic fish out of the water premise.
They had so many good story threads to pull. The relationship with the community, fixing up the restaurant, dealing with their own personal demons, dealing with family, solving a mystery related to the brother's death and maybe a conflict with the loan shark uncle or others, the relationship with the rough workers who would learn from them but also teach them valuable working class lessons.
Instead all of that was either resolved or abandoned in the first season and the second became a weird transition phase into a completely different show in the third where nothing is quite as interesting or compelling. They're just yet another crappy overpriced and pretentious restaurant with a bit of drama and no clear goal. And they included that detestable nurse character with the weird eyes. They also elevated the black female chef for literally no reason into the position of partner. Feels unearned and is clearly just DEI crap.
The show should have been 4 seasons. 1 as it was. 2 they start finding success but loan sharks and personal trauma related to the brother derail the plan, 3 they finally find their footing and start expanding into a second location by the end of the season after many struggles, 4 close all story lines, explore some more family drama caused by their souls being consumed by the business and do a Dr House ending where Carmy leaves to start over somewhere in Asia.
