Liotta's acting was weird in that scene.
It was supposed to be genuine laughter (gangsters can be dimwitted so it's ok for them to laugh at dumb stuff) or a nervous laughter (because he was afraid).
Except he performed it as a genuine but poorly acted laughter.

A nice touch in the scene is all the sycophants laughing along at the other tables. Pesci isn’t even at their table, yet they feel that they should be seen laughing at his shitty story.
