Yes, but mostly because Hopkins is written like a very obvious psycho, with 0 subtlety. He's literally sniffing the air around and drooling. It's not serious.
Mads' Hannibal has to pretend to be normal and act all refined for 2 seasons, so he is instantly better. And even when he lets his dark side show, he does it in a cold detached psycho way, not drooling and making weird noises.
