I'm pretty sure it's Lord of the Rings films that cemented "medieval is black and leather". They were huge hits, so everything else follows in their lead.

There's also the idea that bright and colorful costumes are unrealsitic. They don't look macho by our modern day standards.

it's cheaper these days to do black costuming and I suppose it brings out the actor's faces? It would have been outrageously expensive to outfit your army with black clothing and armour in the middle ages, everything was dyed with naturally bright colours in reality.

Lord of the Rings were on production way before the release of Singer's X-men. If anything it was a trend that come way before. The Matrix for example also rock that aesthetic of mute colors and black leather costumes but I doubt it was the first one that came up with it.
