Because it was a balance of timeless "adult" humor, funny gags for the kids, and a decent story.

From what I've heard, being assigned to Shrek was like punishment duty at Dreamworks so all the people that didn't play nice with corporate HR ladies were put together in the basement to just fuck around with no oversight, which is how you get a children's film with a villain called "Lord Fuckwad"
