He was the godking of his own religion with him at the head. He knew Eru existed, but in his mind he was the only arbiter of Order left to impose it over middle earth. Plus magic was fading, but his industrious ways allowed it to stay in the realm through his ringcrafting.

So what does the Sauron religion look like? I don't think he cared about what you believed in, only that you obeyed and remained subservient. There wouldn't be churches, mass, sacraments or anything like that, but there would be factories, very little nature, hierarchy, and absolutely no true free will. Essentially it would be some weird cyberpunk dystopia but in a medieval setting, one single conglomerate mega-corporation and Sauron is the permanent CEO, with all the middle earth creatures being doomed to be wagies for life or killed.

Assume Sauron win, what happens? All of Middle Earth is dark, barren, and filled with Orcs like Mordor? Then what? Does Sauron just sit in his Mt. Doom castle bored and upset that he doesn't have anything else to conquer and everything looks like shit now?

His ultimate goal was order. Sauron literally wanted peace. He thought the world was too chaotic, that the creatures in it were prone to violence and destruction and disharmony. So he sought power to rule over them to enforce compliance. Basically imagine some engineer who wants everything in its proper place, ticking away perfectly in harmony with all the parts around it, nothing malfunctioning. That was how Sauron thought. If he won he would have made everyone conform, placed them in the most efficient places to make maximum use of their skills and talents to make creation run more smoothly. He would have turned middle earth into a machine, everyone being a cog in the perfect place within it. No disorder. Just the hum of a well oiled engine. But ask yourself if you'd want to live in a world that values absolute order over everything else

yeah that's a bit bullshit though

he does not reign over some realm of pristine, clockwork-like order and tranquility and precision. his realm is a postapocalyptic wasteland with monster, zombies and mutated orcs that can barely function mentally to obey his orders (which seem to be simplistic anyway). there's no trace of any order or organization past rudimentary horde-like behavior. the only trace of any higher craft is the ring and everything he's done since shows no trace of any higher civilization or anything of the sort.
the only "order" he seeks is total subjugation in the most primal sense, nothing else

Of course there is no order, because he hasn't created it yet. That was the difference between him and his master. His master was angry because he literally couldn't create things. He could only reorganize them. He was jealous of "god" having the ability to do so. So he drove him over the edge to the point of wanting to destroy everything if he couldn't create. Sauron on the other hand had no problem with reorganizing things. He liked doing it. What pissed him off was that things like men, dwarves and elves were incredibly resistant to doing what they were told to create a higher level of order. It infuriated him
