Better Call Saul was two different shows mixed together, and the central drama of the better show died alongside Chuck in the S3 finale. It becomes unmoored after that, and in part that isn't so bad given that the rest of the story focuses on Jimmy falling apart as the two worlds collide, but the very best parts of the show are just indisputably the Jimmy-Chuck interactions in the first 3 seasons.

I actually think even the cartel bits are mostly better early on too, which really doesn't help. Hector is just a more compelling antagonist than Gus or even Lalo, despite the latter being hilarious. And Hector becomes a vegetable in the very same episode Chuck dies, which is easily the peak of the show imo.

The later season are not terrible or anything though. There is still some interesting stuff going on.

I really don't like the Kim parts however. Kim is an absurdly unrealistic character

Exactly. And the entire reason for the cartel/gus plotline was because they weren't confident in their lawyerkino, that the lack of action wouldn't carry over the audience of BB.

Sure, Howard could've used more scenes, but aside from that there's no shortage of character building esp with chuck and jimmy who are the main draw.

The way I see it is that this is the sort of thing Netflix would do; instead of just starting the show, there'd be a full season of backstory with the finale being finally meeting Jesse.
You'd think you'd enjoy it, but there's virtually nothing you can do there that is interesting. Shows rely on abstraction, which is useful when you're trying to set the stage instead of wasting limited time in your production.

Could never rewatch this show knowing how it turned out, feel like anticipation is the only thing it had.
