I just started my first tour working in the steam room at the local seafood restaurant. I didn't believe any of the stories. I was just an all american kid who wanted a little money during the summer. Now that I"ve survived my first sunday blitz I'm just not the same person I was going in. I can't even tell you when it happened. There is just nothing inside anymore. You think you're going to panic but that doesn't happen, you just go absolutely numb.

Many young chefs returned home to their families from the kitchen broken: trembling and shaking, anxiety, nightmares about sending out raw chicken. A lot of them couldn't cope, got addicted to pills, suicide even
