This is the most obvious explanation since the Jockey's chest is broken open from the inside. That being said >>213493591 is right about the art direction. The hangar where all the eggs are suggests they're either cargo or somehow part of the ship. There's this weird laser light thing positioned just above their closed mouths and when it's broken that's when one of them opens. I think it's implied that the space jockeys were using them for something or transporting them somewhere until they broke out of containment.
