It makes no sense to die in the Matrix. When I unplug my Laptop neither it nor any other electrical device on the circuit dies. You can clearly see the machine interface on the back of the human head, where you plug into the Matrix. It's not a short circuit or anything dangerous. Maybe if you get shot yes, but the Matrix doesn't send a death signal just because you unplug.

They could have explained it better, but I think the idea was that part of your consciousness leaves your brain and is uploaded to the Matrix servers when you're jacked in.
So if the plug is abruptly pulled, then it kills you by fully separating the two

The brain of the corpse would probably need to have been preserved a certain way. Under normal circumstances, the cells and circuitry in the brain quickly break down and fall apart when it dies, making it non-functional and unsuitable for anything like that. Smith took over and possessed Bain when he was alive, and kept him that way- he probably couldn't have done it if Bain was killed in between

But it doesn't happen in their mind. In their mind they are in the Matrix and when you unplug the neural pathways are redirected back to your real body. I have neuropathy which means I'm in a kind of superficial pain constantly. It doesn't physically affect anything but god damn does it hurt. maybe it's the same if you're in a brain simulation, you get punched in the liver real hard by an agent and you're going to feel it in reality.

The matrix functions on belief, the communication between your brain and the matrix goes both ways when you are connected, you are telling the matrix what will happen as much as it's telling you what is happening, so if it's telling you that you are dying (and you believe it), then you actually die. Equally, if you believe you can fly, or move faster than possible or your muscles are stronger than possible, then you actually are because your brain tells the matrix.

It was in the first film. Smith is spewing a bunch of nihilistic shit at Morpheus to try to hack into his mind, and he says that the first matrix was a utopia, but the human mind recognized it as unrealistic and kept trying to wake up from it.

For some reason the machines built the Matrix to both send and receive signals to and from your body, maybe it's because they want authentic biological reactions from your real body as feedback to the simulation and for learning. That's why getting punched has the Matrix sending the ouch signal to your real body. Otherwise it would have to calculate the ouch response to keep the simulation authentic and you dreaming.

I thought it was the premise that it's so realistic you can taste touch smell feel, etc, and so when you get shot and die, your body actually simulates those functions in real life thinking they're real, like going into cardiac arrest from getting shot in the chest.

Let's analyze this
You're trying to describe a client-server connection where the human body and it's mind work as some kind of browser and every stimulus produced by matrix related events are transmitted as a live connection, so human consciousness never leaves the mind, therefore it never leaves the body. Assuming this is what you're trying to say, human-matrix connection is not different from a simple ssh connection with a secure hash algorithm, however, the main difference between a computer using a ssh connection to use other machine resources and a human connecting to matrix is the body reacting to trauma. That means human connecting to matrix is more like using your gamer computer to reach call of duty servers and somehow, every kill your suffer in the game is translated to some damage in your graphic card.
