He was probably thinking "I can't go back knowing what I know/seeing what I've seen" or something along those lines. Like even his will to do food was broken until the ending where he happily makes a fast food burger.

First off it’s a movie. Suspend your disbelief. But to play into your question I’d say that he obviously loved cooking and pushing the boundaries of what he could do with food, but the further he pushed the more expensive it became. He garnered the rich cliental because they were the only ones who could pay for the food he was making. It’s only at the end of the movie does he realize that he was happiest when it simple. Make people good simple food, people happy, feel good.

Yeah this is something that confused me about the movie. I get why he hates them but how the fuck did he manage to get an entire kitchen staff, waiter team, sous chefs etc. to follow into his bullshit. Its hard for me to buy the fact that EVERYONE was somehow just as full of hate and rage towards the upper class clientele, when the vast majority of them have never interacted with them before.
