Sauron was offered the chance to redeem himself back in the First Age, come back to the fold so to speak, he refuses it and his shortsightedness - not even imagining someone wouldn't want the ring, like Sam who carries it for a bit - is his fatal mistake. Evil destroyed by greed, a capital sin.

Minas Tirith isn't really a city, it's a fortress. Hence the huge walls and tiered gates. The architecture alone can withstand massive sieges with a minimal manpower, but even then, Gondor is so beaten at that point that one more siege is all it takes.
