Beyond explicitly drawing the comparison between Undyne's feelings for Alphys and Susie's feelings for Noelle, what I like about this quote is that
1. It makes a distinction between the deeply cared for friends and the "something about that one shy girl." Undyne and Papyrus have a great dynamic, she obviously cares a lot about him, but at no point is romance teased between the two or their relationship made out to be anything but platonic.
and
2. It implies that "who does Susie end up with romantically" isn't some super spoiler, and that's great because it would really suck if the game never let their interactions evolve past "will they or won't they" until the end. It implies that how their relationship develops is the important thing for the story, not whether it happens at all.
AFAIK it's unusual for him to make a statement like this, but I'm glad he did, because certain aspects of chapters 3 and 4 seemed like they were rolling out the red carpet for /v/ posters and their ideological ilk.
Maybe he finally noticed that some of the game's biggest memes now are about the lesbian character getting cucked and raped, and that the MC and the lesbian's love interest constantly get drawn alongside the characters from those weird politically motivated HMOFA gator and snoot games.
Anyway, it's a relief to know his brain hasn't been infected by the spirit of a /v/ poster and that there's still some sort of plan here.
