The NES was probably the console that evolved the most during its lifetime because of those mappers.
The guys installed chips that managed larger ROMs for graphics than what was supposed to be the console's limit, so they could put several "games" of content into the cartdrifge ROM, and a special chip (mappers) managed it so that the correct graphics were loaded immediately because, unlike the SNES, the PPU (Picture Processing Unit) accessed the data directly from the ROM without having to go through the CPU, which allowed for almost instantaneous loading.
NES games evolved much more during the console's lifetime than SNES games.

There's a case to be made for the SNES too. Over its lifespan it saw the rise of 3D graphics and had games with the Super FX on board to give it the horse power to do it. Hell, games like Kirby Super Star came with their own processor on-board because the base console's was too slow.
