Considering how much of a mess the original was, it didn't have to do much. They really did a great job though with the QoL improvements and additions. I still replay it every couple of years and would never replay the original

I love zero mission and prefer it over the original but there's no such thing as an "objective improvement". The original metroid's lack of a map system forces the player to draw their own map, something which leads the player to map out which is a whole mechanic on it's own. The original also has a darker feel due to it's limitations. You're not gonna catch me playing the original anytime again, but I don't think it's helpful to judge a remake as "objectively better" because that's how we get all the remake slop we get now.
Anyway I like the first 2 REmakes, twin snakes (goofy cutscences are peak), and the yakuza kiwami remakes. Again all of these games have things the originals do better, but I like these ones

The real reason to play the original is for a playthrough of Pokémon Stadium. These games were meant to be played in tandem and there's no other way to have the proper experience outside of playing it on an actual N64.

I like ORAS, the option to do a bunch of optional legendary fights and a second wave of mega evolutions was great. The delta episode NPC was a bit edgy, but otherwise it was good.

The only downside to ORAS was the lack of a Battle Frontier. Everything else about it is fantastic, especially the music. I really enjoyed Let's Go for what it was. I have a hard time considering it a remake when it feels like a sort of an alternate scenario-immediate sequel to Yellow. BDSP was genuine shit though. I think I got to the Pastoria City and quit because the bike kept getting caught on literally fucking everything

I can't disagree with the OP, Metroid Zero Mission is a very competent game, and I can't imagine anything that makes it worse than the NES version, except maybe for those who like more cryptic games and getting completely lost. In that case, the NES is better because it really throws you in the middle of nowhere and tells you to fuck yourself and find your own way out of that dark hole.

I didn't play HGSS but I did play Fire Red. I honestly still prefer the original game but then again I stopped being a Pokemon fan after the 3rd gen which for my age group happened to a ton of other kids/teens back in the day. I also am willing to accept a lot of this may just simply be due to nostalgia. Even before the release of R/S/E you had most teens seemingly preferring Yugioh. At least that is how it was in my neighborhood and school. So its odd to see how Pokemon not only survived this whole time but actually seemingly got a boost in popularity after the third gen games. My speculation is that after the initial wave of fanboys many of us left and in its place new fans (children) came in with probably the 4th gen games onward. Maybe you guys can break it down more but just making my own observations here. From what I know of the sales my speculation seems like it could likely be true. The series was a massive success but it did decline a ton over the years.

Also going to have to agree with these two posters. Much of my enjoyment for gen 1 and 2 is thanks to Stadium. They added so much to the games besides the fact you can play on the big screen and not have to use those poorly lit Gameboys that needed those wormlights.
