I still don't get why they cut the Lothlorien part.
Most of the extended edition of fellowship is 10/10 even if you can see why they had to cut parts for brevity, but that one is pretty damn important.

There wasn't really anything left to cut after they left rivendell that wasn't vital to the moment to moment plot. They were likely eager to minimize the post-moria section of the film as well, given that was functionally the big action setpiece and thus kind of the climax to the average viewer. The theatrical cut already barely gives any context to galadriel either.
That said I still think it was a mistake.

Honestly I think most of the extended edition stuff was worth cutting out, awkward lines usually reshuffled from some other point in the book often from a different character entirely, and they don't mesh with the newly created dialogue because nobody they had was actually capable of capturing the particularly autistic mastery of various time periods and dialects of English that Tolkien had. I'm sure giving Tom Bombadil's lines to Treebeard made Christopher Tolkien tear his hair out. But yeah removing the few humanizing moments Boromir had was a baffling choice, he basically spends the whole movie being the guy who's obviously going to get corrupted by the ring and betray them.

As a completely not tolkein lorefag, my basic understanding of the temptation of the ring is that you get all these ideas of what you can do with it, like is it Isuldur who cuts it off sauron's hand and then ignores Agent Smith about destroying it then and there because the ring tempts him with what he can accomplish using it versus the gain of getting rid of it. So Boromir is on this quest to destroy this thing but if he had it instead of the child shaped whiny bitch, then he could use it to secure the safety of his kingdom.

Yeah, almost every fan disagrees, but I think the extended edition of Return of the King actually makes it a worse film.
Jackson already kinda ruined the significance of the Battle of Pelennor Fields by bringing the ghosts there (Aragorn just brought reinforcements ghosts helped him secure in the book), but extended edition also removes tension by showing that the ghost army agreed to join Aragorn. Theatrical cut just cutting off before their answer was much better.

He spent all his life fighting orcs at his doorstep while the rest of middle earth sat around twiddling their thumbs, essentially being border patrols, keeping the rest of middle earth safe from orc raids out of Mordor. Knowing that Gondors defence and forces are getting stretched thin, it's only a matter of time before they get overwhelmed and defeated and Minas Tirith burnt to the ground.

Being an fallible human, he is easily swayed by the one ring, though he wants to use it to defend minas tirith, like Gandalf fears, it will corrupt anyone who uses it.

He redeems his honor in the end though, by sacrificing himself to try to save Merry and Pippin and he's honestly my favorite character in the fellowship just because he's very human compared to Aragorn, Legolas and Gimli that seems like cardboard cutouts in comparison.

I wouldn't go quite that far. Boromir still had some humanizing moments in the theatrical cut such as when he trains the Hobbits in swordfighting and laughs himself silly when they gang up on him, as well as when they escape Moria and begs Aragorn to give the Hobbits a moment to mourn their loss. I do agree they shouldn't have cut his other moments, but they didn't completely take out his good, sympathetic side either.

He was meant to be the "everyman" type. He's a normal guy with fears who falls easily into temptation but is ultimately still a good person at heart. I liked him way more than Aragorn because he's more relatable, same with Theoden.

he had the most to lose. everyone else lived in secluded areas that were still safe, Gondor was the shield against Sauron and was being annihilated without anyone else helping or offering a solution. the fear and desperation of his homeland being reduced to ash is what pushed Boromir to the Ring

In Fellowship the extended scenes mostly serve their function well, they expand the movie with worldbuilding and additional context for characters and their motivations.

In Towers some of them are alright but the forced comedy starts becoming noticeable and some of the scenes are somewhat ill-fitting. They interrupt the flow. But it's not too bad, it still works and you won't find any fault in it if you're a fan of LOTR.

In Return however many of the extended scenes are comically shit. Most of it is just humor that even capeshit movies would sneer at for being too juvenile, it's stupid shit that ruins the pacing like skull avalanches or Saruman and Theoden exchanging crass insults (which culminates in that bizarrely brutal slam fall of Saruman on that wheel that plays out like a comedy scene), or the dead cheekily trolling Aragorn for no real reason, or Sam and Frodo fucking around with Orcs from southeast London, or Gimli burping.
Return is best watched with the theatrical edition because most of the extended scenes suck and it really stretches the runtime into absurdity.

In respect to Aragorn, it is true he isn't as relatable as Boromir or Theoden, but at least he has the excuse that he isn't just any normal guy. He comes from a line of mighty kings who is eventually expected to lead the world of Men, and that expectation looms ever high upon him. One thing the movies did that I liked over the books is showing him struggling with this expectation, feeling that he shares the same weakness as Isildur before him, whereas in the books, he is far more sure of who he is and what he has to do.
