The trade off is less maneuverability, but these days the idea is that no jet can actually dodge a modern missile and they're all just going to be shooting missiles at each other from too far away to even see each other directly.
So fast and hard to see is the focus, at the expense of classic fighter jet stuff.

Lads, I bought AC7 for cheap during the previous sale, hasn't started it yet. Is there a good and synthetic tl;dr lore text or video I can read/watch to catch up? I feel like I won't get the full experience without knowing the previous events and tidbits, even if I suppose the game will make it easier for newcomers into the series. But still.

The British helped build the f-35, it's as close as you're going to get without working with the US, china or Russia. Both Japan and the UK have a long history in aviation and their design goals mostly align, if they can't do it then nobody can.

I was about to say there's basically nothing besides reoccurring continents at war which are easy to understand as direct analogies to earth countries but then there is some key narrative Easter eggs you might appreciate more as an AC fan, as someone who played them all I didn't even catch the references so I'm not sure watching a 20 minute video would even give you the context you need.
