i felt the opposite. BOTW has some of the weakest dungeons in the series but the overworld is by far the most interesting in the entire series despite looking so empty at first

it isnt linear and progression is up to you, so every game is different. also, it's up to you how to use the game tools to solve problems. What makes it fun is using all this to find solutions to various problems, and getting stronger via solving puzzles (shrines, etc).

it gets better when you stop thinking its a Zelda game, its an open world inspired from Ubisoft games with a Nintendo twist but the crafting still suck.
