Is there a concept contrary to speedrunning?

Like a game where is less about doing things faster, but just meditate and do thing slower?

It takes 400 real-time days to beat. You do recreational activities and can read whole books.

how does it keep track? system calendar? 400 days of running the game nonstop? Log-in system that keeps track of how many days you launched the game?

There is an entire genre of youtube videos dedicated around larping as a e3 presenter. Playing with no hud, smooth camera motion, slow walking, no control errors etc.

System calendar I think. The in-game timer progresses even when the game is closed. You can technically finish the game by starting it, closing it, and opening it 400 days later.
